How to cook Bolotov's kvass at home? For the base of the drink, take boiled water or, to speed up fermentation, milk whey. The serum is pre-filtered by passing through cheesecloth.

Number of ingredients for three liters of liquid:

  • Granulated sugar - 1 glass or 300 grams;
  • Sour cream - one teaspoon of a product with 15% fat content, always natural;
  • Half a glass of dry herb celandine (25 grams) or fresh celandine by volume a whole glass.

The base for kvass, be it water or whey, should be at room temperature, you need to dissolve a glass of sugar and a spoonful of sour cream in it. Form a bag with a four-layer wall out of gauze and put celandine (dry grass or chopped fresh), a glass or metal weight into it, so that the bag sinks to the bottom of the jar.

Cover the jar with gauze, folded in four, and place it in a dry place out of sunlight. The infusion period is two weeks; during the preparation of kvass, it is necessary to constantly stir and remove mold from the surface of the solution. Around the end of the first week, a sediment will appear at the bottom of the can, then the liquid must be poured into another container and diluted with water, and the sediment removed.

At the end of the fermentation process, foam will begin to form on the kvass. Then you can take a third of the liquid from the can (1 liter) and use it within three days, taking it before meals. You can dilute kvass to the previous volume no more than three times, after which a drink and fresh celandine are prepared.
