Diet table number 1 for ulcers
Diet table number one is one of fifteen nutritional systems developed by Soviet nutritionist Mikhail Pevzner. It is recommended to observe it in case of peptic ulcer of the duodenum and stomach during the recovery period and with a mild exacerbation of the disease. It can also be used for a mild exacerbation of chronic gastritis with increased or normal secretion of gastric juice and for acute gastritis during the recovery period.
Thanks to this system of therapeutic nutrition, the motor and secretory functions of the stomach are normalized, ulcers heal better, and inflammation is reduced. The diet implies some restrictions in the methods of cooking and choice of products, but at the same time it can be considered complete in terms of carbohydrates, fats and proteins, as well as calories.
Diet table number 1 for an ulcer: what is possible, what is not?
Diet table number one involves following some rules:
- Food must be steamed, boiled, or wiped.
- Individual dishes must be baked without crust.
- You can use table salt in moderation.
- Coarse meat and fish are allowed to be served in pieces.
- Before going to bed, you should consume cream or milk.
- It is necessary to exclude excessively hot and cold dishes from the diet.
- Food should be taken 5-6 times a day.
- The calorie content of the diet is the number one table per day - 2800-3000 kilocalories.
Diet number one is allowed to consume:
- Cocoa or weak tea, if desired, add cream or milk.
- Galette biscuits, white crackers, yesterday's white bread.
- Non-acidic fresh sour cream and yogurt, cream, milk, low-fat grated cottage cheese.
- Eggs in the form of steam omelets or soft-boiled (no more than two eggs per day).
- Carrots, beets, cauliflower, potatoes, zucchini and young pumpkin in chopped or boiled form (puddings, mashed potatoes), in a small amount of green peas.
- Berries and sweet ripe fruits, preferably baked, mousses, compotes, jellies, jelly and juices from them.
- Pastila, marshmallows, sugar.

Rice, semolina, oatmeal, buckwheat (crumbly or pureed porridge). Small pasta or vermicelli.
- Lean meat: rabbit, veal, beef, turkey and skinless chicken.
- Snacks include a salad of boiled vegetables, fish and meat, lean ham, and mild cheese.
Excluded:
- Strong fish and meat broths.
- Fatty fish and meat.
- Mushrooms.
- Canned fish and meat, marinades, smoked meats, pickles.
- Black bread, pies, pastry.
- Chocolate, ice cream.
- Carbonated drinks, black coffee, kvass.
- All ready-made dressings except milk sauce.
- Canned vegetables, white cabbage, cucumbers, onions, spinach, sorrel, radish, turnip.

There is a menu for the number one “pure” and “not pure” diet. Depending on the stage at which the peptic ulcer is being treated and what is its course, a nutritionist or doctor may prescribe one of these options. The "not mashed" diet in terms of its product range and chemical composition corresponds to the "mashed" diet. Dishes and foods that excessively stimulate the secretion of gastric juice are excluded. Food is boiled, but not rubbed. Whole fruits and vegetables, crumbly cereals are allowed.
Approximate menu of "mashed" diet number one: first breakfast - tea with milk, mashed milk rice porridge, soft-boiled egg. Second breakfast - an apple baked with sugar. Lunch - pureed oat milk soup, steamed meatballs with carrot puree, fruit mousse. Afternoon snack - crackers, rosehip decoction. Dinner - fish baked with milk sauce, tea with milk, mashed potatoes. You can drink milk at night.
A sample menu for a "not mashed" diet table number one: the first breakfast - crumbly buckwheat porridge, soft-boiled egg, tea with milk. Second breakfast - rosehip broth, fresh non-acidic cottage cheese. Lunch - boiled meat and carrots, potato vegetarian soup, stewed dried fruit compote. Afternoon snack - crackers and a decoction of wheat bran with sugar. Dinner - fish baked with milk sauce, tea with milk, carrot-apple roll. You can drink milk before bed.

Mashed potato soup. Ingredients: 1-2 eggs, 10 g butter, 200 ml milk, 150 g potatoes. Boil prepared potatoes and rub them through a sieve. Dilute the resulting puree with milk and drained broth, add salt and boil again. Before serving, season the dish with egg yolk, ground with butter.
Cauliflower cream soup. Ingredients: 2 eggs, 5 g butter, 5 g wheat flour, 400 ml water, 150 ml milk, 100 g cauliflower. Cauliflower must be peeled, rinsed and boiled until tender, then wiped. Prepare an egg and milk mixture from eggs and milk. White sauce is made from milk, butter and dried flour. Add salt, milk sauce to the vegetable broth with mashed cauliflower, after bringing to a boil, remove from heat and season with egg-milk mixture.
Boiled vermicelli with grated cheese. Ingredients: 25 g cheese, 5 g butter, 360 ml water, 60 g vermicelli. Pour vermicelli into salted boiling water, boil until tender over low heat, put on a sieve. After the water has drained, fill with butter. Sprinkle grated cheese over the vermicelli on a plate.
Boiled potatoes with dill. Ingredients: 10 g of dill, 10 g of butter, 250 g of potatoes. Peel and rinse the potatoes, place them in boiling water, add a little salt and cook until tender. Then drain the water and dry slightly on a hot stove. Before serving, sprinkle the dish with finely chopped dill and pour over the melted butter.
Carrots in milk sauce. Ingredients: 10 g granulated sugar, 10 g butter, 5 g wheat flour, 100 ml milk, 150 g carrots. Cut the peeled carrots into slices, place in a saucepan, pour the required amount of water, add butter, sugar, salt, cover and simmer for 20-30 minutes. Pour hot milk sauce over the finished carrots, stir gently.
Diet table number 1 for children
Diet table number one can be prescribed by specialists as a system of therapeutic nutrition for some childhood diseases of the gastrointestinal tract. The list of restrictions and recommendations regarding cooking methods are the same as in the dietary table number 1 for adults, but a pureed menu option is almost always recommended for kids.
