Diet table No. 5 was developed by the Soviet dietitian Mikhail Pevzner specifically for people suffering from acute and chronic diseases of the liver, gallbladder and ducts, as well as undergoing surgery on these organs of the gastrointestinal tract. This dietary system implies a full daily calorie intake, but imposes a restriction on the use of fatty, spicy, sour, pickled and fried foods. However, the list of permitted foods contains ingredients for making many delicious and satisfying dishes. We offer you simple and affordable recipes for diet number 5 for all occasions: for breakfast, lunch and dinner.
Onions are allowed only boiled. It is specified as an option (this is an optional ingredient). During an exacerbation, onions are excluded.
First and second courses
Mashed potato soup with chicken
To prepare the soup, you will need potatoes (3 tubers), chicken breast (200 g), carrots, onions and salt.
The chicken needs to be cut into strips and boiled. At this time, raw potatoes, carrots and onions are diced. Put the chopped vegetables in a separate saucepan, pour cold water and cook until tender. Then the boiled chicken breast is transferred to the same dish and, using a blender, the whole mass is crushed to a puree state. Then it is salted, brought to a boil and turned off.
To diversify the dish, you can add zucchini, broccoli, cauliflower, rice to it.
Pilaf
In order for pilaf to comply with the principles of dietary table No. 5, it must be prepared using a special technology.
Products that will be required for cooking: rice (700 g), beef without veins (half a kilo), four carrots and onions. Salt is added to taste.
It is necessary to cook beef in advance, for which it is boiled. The water must be changed at least once during cooking. If a person cannot eat beef, then you can replace it with chicken meat.
After the meat becomes soft, it is cut and put into a cauldron. Chopped carrots and onions are also added there. Then pour in a small amount of water and simmer over low heat. When the water evaporates, the mixture of meat and vegetables is salted and rice is added to them. Rinse the groats well beforehand. Rice is poured with water so that its border is 1.5 fingers above the level of the cereal. The dishes are closed with a lid and the dish is stewed over the slowest heat. There is no need to stir pilaf during cooking. If there isn't enough water to cook the rice, you can add a little more from the hot kettle. At the end of cooking, the pilaf is stirred and left to infuse.
Cauliflower soufflé
To prepare the dish, you will need the following set of products: cauliflower (600 g), semolina (30 g), salt, one egg, butter (10 g), milk (70 g).
Cabbage is boiled and ground, semolina is soaked in milk at this time (about half an hour). Egg yolk is driven into cauliflower, then butter, swollen semolina and whipped protein mass are mixed there. The soufflé is placed in molds and baked in the oven for no more than 10 minutes. Before serving, the dish can be garnished with croutons.
Chicken Meatball Soup
To prepare the soup, you will need pearl barley (30 g), potatoes, carrots, sour cream and lettuce. For meatballs, you need to purchase minced chicken, or make it yourself by twisting the chicken breast in a meat grinder.
Pearl barley is cooked separately from vegetables. Carrots, lettuce leaves are finely cut, poured with water and put on fire. After half an hour, raw potatoes, ready-made pearl barley, shaped meatballs are added to them. The soup is brought to a boil, after which it is salted, boiled for another 10-15 minutes, covered with a lid and allowed to brew. Before serving, the soup is decorated with parsley and sour cream is added to it.
Beef balls with zucchini
To prepare the dish, you will need low-fat ground beef, ghee, cheese, sour cream, zucchini.
Minced meat needs to be formed into meatballs, which are laid out on a dish greased with butter and baked in the oven for at least 30 minutes. Zucchini at this time is cut into circles, peeled and boiled in water with the addition of salt. Then they take a clean form, put boiled zucchini on it, put a beef meatball in the middle, sprinkle with cheese and pour sour cream. The form is sent to the oven for another 15 minutes.
Hake with vegetables
To prepare the dish, you will need hake fillet (2 pieces), zucchini, carrots, half an onion, butter (20 g), salt.
Cut carrots and onions into cubes, grate the zucchini on a coarse grater. A layer of onion is spread on a baking sheet, it is covered with fish fillets, then there is a layer of carrots, zucchini and salt. The dish is baked for 40 minutes at a temperature of 150 ° C.
Pumpkin casserole with noodles
To prepare a casserole, you will need as much grated fresh pumpkin as fits in one glass, 200 g of noodles, one egg, 0.5 cups of milk, two tablespoons of sugar and a tablespoon of butter.
Grated pumpkin should be salted, added sugar and stewed until soft. The noodles are boiled separately, bringing it to half-readiness. Then milk and butter are added to the vermicelli and left to infuse for half an hour. After this time, the pumpkin and noodles are mixed, an egg is driven into the resulting mixture, laid out in a heat-resistant form and sent to the oven for 20 minutes. Before serving, the casserole is allowed to cool, pour sour cream over it and serve.
Salads for diet number 5
Cheese and beetroot salad
To prepare the salad, you will need 3 small beets, 100 g of hard cheese, low-fat sour cream (3 teaspoons).
Beets must be rinsed thoroughly before being put on fire. You need to cook the root vegetables for about an hour, and then put them in cold water for another 30 minutes. After this time, the beets are peeled and cut into strips. The cheese must be grated using a coarse grater.
Beets are laid out on a square-shaped dish, after mixing them with sour cream. Sprinkle the beets on top with grated cheese. You can decorate the dish with parsley and sour cream. Before eating the salad, you need to cool it down a little.
Vegetable caviar
This is a delicious and dietary snack that will complement almost any main course. To prepare caviar, you need 2 small potatoes, one carrot, one fresh cucumber. You will also need vegetable oil and salt.
Potatoes and carrots are boiled in a peel, then cooled, peeled and coarsely chopped. The cucumbers are chopped, then all the products must be twisted in a meat grinder. The resulting mixture is seasoned with vegetable oil, salted and mixed again.
Cabbage salad with celery
To prepare the salad, you will need cabbage (100 g), celery (50 g), one apple, half a teaspoon of sugar and 1.5 tablespoons of sour cream.
Rinse the cabbage well, chop finely, salt and squeeze. The resulting juice is drained. The apple is peeled and seeds removed, cut into slices. The celery is cut into strips. Then all the components for the salad are mixed, sugar and sour cream are added to them. The salad is laid out in a salad bowl in a slide.
Breakfasts and desserts
Lazy dumplings
A very easy to prepare dietary dish that can be offered not only to adults, but also to children.
Products required for making dumplings: fresh cottage cheese (half a kilo), sugar (2 tablespoons), one raw egg, flour (3/4 cup), salt.
Curd is mixed with egg, sugar and a pinch of salt. Then a little flour is added to the resulting mass. When the dough acquires a soft but elastic consistency, it can be considered ready. It should be slightly sticky and damp. Before you start sculpting dumplings, you need to wet your hands with water, so it will be easier to work with the dough. A long sausage is formed from the resulting mass, which is cut into fragments of the same size. You can give any shape to dumplings. Ready dumplings are dipped in boiling water and cooked for no longer than 3 minutes. When all the dumplings are on the surface, the fire can be turned off.
Serve dumplings well with sour cream. Such a delicious breakfast can be prepared for future use by placing some of the dumplings in the freezer.
Rice-curd casserole
To prepare a casserole, which can be used as breakfast and for dessert, you will need the following products: rice (250 g), cottage cheese (200 g), 3 apples and 3 chicken eggs, a little raisins, 2 glasses of milk, a tablespoon of sour cream, 2 tablespoons tablespoons of sugar.
A glass of milk is mixed with a glass of water and rice is boiled in this mixture. Cottage cheese is thoroughly rubbed through a sieve, and eggs are beaten with sugar. Apples without peels and seeds are cut into cubes. The rice is cooled, cottage cheese, raisins, apples and an egg-sugar mixture are added to it. All products are laid out in a heat-resistant dish and placed in the oven. Top the casserole with a mixture of eggs and sour cream. You need to keep the dessert in the oven for a quarter of an hour at a temperature of 200 ° C.
Steamed omelet
A steam omelet is a great breakfast option that fits within the menu of table 5. In this case, the yolk may not participate in the preparation of the dish (provided that the patient has recently undergone an operation and is in the recovery stage). In this case, the yolk is detached from the protein. Whisk the protein, mix it with low-fat milk, salt and pour into the bowl of a double boiler. After 20 minutes, the omelet will be ready.
You can add a dash of nutmeg to the omelet to add flavor to the omelet. As for the yolk, when the process of exacerbation of the disease has passed, it may well be added to the dish.
Milk soup with potato dumplings
To prepare the dish, you will need 800 ml of milk, 4 potatoes, 2 tablespoons of starch, salt and fresh carrot juice.
Potatoes must first be peeled and grated on a fine grater. After the juice separates, the potatoes are carefully squeezed out, and the starch is combined with the potato mass. Then small meatballs are prepared from it, which are boiled in boiling milk until they are completely cooked. At the end of cooking, carrot juice is poured into the soup, salted, boiled for another minute and turned off.
Oat cookies
To make cookies, you will need oatmeal, two eggs, sour cream (300 g), sugar (1 glass), butter (100 g).
The flakes will need to be dried well in the oven, then grind them to a powdery state. Then sour cream, eggs, butter and sugar are added to the flakes. After kneading the dough from these ingredients, roll it out, shape it and bake it in the oven at 180 degrees for a quarter of an hour.
Beverages
Kissel with berries
For the preparation of the drink, you can use a wide variety of berries (raspberries, strawberries, currants, etc.). You will also need 4 tablespoons of sugar, 2 tablespoons of starch, water (2 liters).
If there are seeds in the berries, then you need to get rid of them. The starch is dissolved in water, after which the berries are poured over them, put on fire and boiled for 15 minutes, until the jelly becomes thick. Sugar is added at the end of cooking.
Rosehip decoction
To prepare the broth, you will need water and rose hips. Take 10 parts of water for one part of the berries. To shorten the infusion time of the broth, you can pre-grind the berries. Then they are poured with water, put on fire and brought to a boil. You can add a little sugar to the broth, after which it is covered with a lid and the pan is left to infuse for 12 hours.

Sauces
It is hard to imagine almost any salad, casserole or meat dish without dressing. However, dietary table No. 5 does not involve the use of spicy, fatty and sour sauces. However, this does not mean that a person should eat tasteless food. It can and should be seasoned, for which you should use the following recipes for sauces allowed on diet No. 5.
Milk sauce
This sauce is a great addition to various desserts: puddings, pancakes, casseroles, cookies. To prepare it, you will need 50 ml of water and milk, 10 g of butter, a teaspoon of sugar and flour, and a pinch of vanillin.
The flour is dried in a frying pan, add butter to it and grind until a homogeneous mass is obtained. Then it is mixed with milk, brought to a boil, boiled for 10 minutes, sugar and vanillin diluted in water are added. The resulting sauce must be filtered, cooled and used as a dressing for desserts.
Applesauce
This sauce is great for groats, cottage cheese, pasta, casseroles. To prepare it, you will need 2 apples, starch (30 g), sugar (150 g), a gram of cinnamon and a couple of drops of lemon juice.
Apples need to be peeled and seeds, cut into small slices, put in a saucepan, add sugar and lemon juice to them, pour cold water over and boil. When the apples are soft, they are passed through a sieve, mixed with water again and brought to a boil. The starch is dissolved in water and added to the applesauce, stirring constantly. Then add cinnamon there.
